The Faichtguat farm is very close to the village of Laces. The Oberdörfer family has run it for over 200 years and as a result has been awarded a heritage estate certificate by the provincial government of Bolzano. Hansjörg does most of the work himself but his father, Karl, and other relatives help out in the busiest tending and harvest periods. Following his agricultural education at the South Tyrol technical college for fruit production, viticulture and horticulture, Hansjörg completed an advanced orchard manager's training course in Germany. This father-and-son team converted the farm to organics a few years ago. They both wanted to farm in a way that was more nature-aware, leaving the smallest possible environmental footprint. Being nature-aware means something very specific for Hansjörg. "Namely, honest production. Because the only thing in it is what it says on the packaging. And in our case that means a mild southern climate and Val Venosta mountain sun."
