Baked Gala apple from Val Venosta

Ingredients for 8 persons:

6 apples variety Gala
2 lemons
1 bowl of raspberries
50 g apple vodka
200 g sugar

For the zabaglione

150 g muscatel
1 vanilla pod
200 g yolks
200 g sugar
vanilla ice-cream

Preparation:

Prepare a syrup with water, sugar, vodka, lemon juice. Remove from the cooker and add apples cut into slices.
Marinate for approximately 10 minutes, then drain.
Prepare the zabaglione with muscatel.
Arrange apples and raspberries in a soup plate.
Cover with zabaglione, sprinkle with cane sugar, flambé and serve with a scoop of vanilla ice-cream.
