Crostata with rice and Golden Delicious apples

A crunchy short pastry encloses a sweet, substantial filling of rice pudding with lemon and Golden Delicious apples. A perfect mix of textures, sweetness and acidity that will drive young and old crazy. Perfect at breakfast or as a snack.

for a mold of 20-22 cm in diameter

1 egg
200 g flour 00
80 g sugar
90 g butter
1 pinch of salt
½ tsp. baking powder
for the filling
120 g round-grain rice
400 ml milk
Zest of half a lemon
50 g sugar
1 egg
1 pinch of salt
½ tsp. baking powder
1 Golden Delicious apple
for decorating
2 Golden Delicious apples

Preparation
Mix flour with sugar, salt and baking powder in a bowl. Add the egg and stir with a fork. Add butter in small pieces and knead with your hands until the mixture is smooth and compact.
Form a loaf, wrap in cling film and let rest in the fridge for 30 minutes. Pour the milk into a saucepan, add lemon zest and bring to a boil. Add rice and cook until the milk has evaporated and the rice is soft, stirring often.
Put the rice into a bowl and allow to cool. Then add egg, sugar, salt, baking powder and one peeled apple cut into small pieces. Mix well. Roll out the short pastry to line a mold of 20-22 cm in diameter, prick it with a fork and distribute the rice filling.
Peel the remaining two Golden Delicious apples, remove the core, cut them into slices and arrange them on the cake. Bake your crostata at 180°C for 45 minutes and allow to cool before removing it from the mold.
