for a cake tin of 22 cm in diameter

3 eggs
200 g wheat flour 00
50 g potato starch
200 g robiola cheese
150 g sugar
80 ml milk
1 pack of baking powder
4 Golden Delicious apples
80 g raisins
50 ml rum

Soak raisins in rum for about 30 minutes. Beat eggs with sugar in a bowl.
Add milk and robiola cheese and mix to a homogeneous mixture. Add sieved flour, potato starch and baking powder and mix with a whisk to a smooth and creamy dough.
Peel two Golden Delicious apples, remove the core and cut them into small pieces. Add them to the mixture together with soaked and squeezed raisins, mix and pour the dough into a greased and floured cake tin of 22 cm in diameter.
Cut the other two Golden Delicious apples into thin slices to decorate the cake’s surface. Bake in the preheated oven at 180°C for 45 minutes.
