Golden Delicious cupcakes with polenta, almond flour and raisins
The perfect snack format
A mix of three different flours for a unique consistency, lots of raisins, the scent of orange zest and delicious Golden Delicious apples cut into cubes – these are the ingredients for this perfect snack. Ideal for afternoon tea or as a dessert with a tuft of unsweetened whipped cream.

for 12 cupcakes
2 Golden Delicious apples
100 g flour type 1
100 g instant polenta
100 g almond flour
120 g light cane sugar
80 g raisins
4 eggs
150 g Greek yogurt
3 tbsp. milk
1½ tsp. baking powder
Orange zest
Lemon juice
to complete
1 Golden Delicious apple
2 tbsp. sugar
2 Golden Delicious apples

Preparation
Soak raisins in a little hot water. Mix flours, polenta, cane sugar, baking powder and orange zest in a bowl. Stir in the eggs, then add Greek yogurt and milk and mix well.
Peel two Golden Delicious apples, cut them into cubes (not too small) and sprinkle with a little lemon juice. Add apple cubes and well squeezed raisins to the mixture. Fill the mixture into 12 cupcake molds until a few mm below the edge.
Cut the remaining apple with a mandolin, sprinkle the apple slices with a little lemon juice and place one slice on top of each cupcake. Sprinkle with sugar and bake at 180°C for about 25 minutes (do the toothpick test, but don’t bake them too long or they will get hard).
Remove from the oven and wait at least 10 minutes before unmolding the cupcakes.
