Apple cake from Laces
For the dough:
75 g soft butter
150 g sugar
1 pack vanilla sugar
100 g flour
50 g cornflour
1 pinch of salt
1 teaspoon baking powder
4 eggs
750 g acidulous apples
250 g mascarpone
powdered sugar for sprinkling
1) Cream butter with 100 g sugar, half of vanilla sugar and a pinch of salt. Add two eggs little by little. Mix flour with cornflour and baking powder and fold in. Put the mixture into a greased springform pan and smooth.
2) Peel the apples, remove the cores and cut into slices of app. 1/2 cm. Cover the dough with apple rings and bake in the preheated oven at 180 C for about 35 minutes.
3) Mix mascarpone with the other two eggs and the remaining sugar and vanilla sugar; cover the apple cake with cream glaze and bake in the oven at 150 C for another 25 minutes. Sprinkle with powdered sugar after cooling.
