Radicchio
Origin: Radicchio is a form of chicory (Cichorium intybus var foliosum) with different varieties.
Plant: Elongated white-veined red leaves form oval heads.
Taste: It has a slightly bitter taste which is common to all chicory varieties.
Maturity: from July to October.
Recommendations: To the north of the Alps, radicchio is mainly added to salads or used as decoration on plates. To the south of the Alps, grilled radicchio or radicchio risotto are considered specialities. Thanks to its compact spherical form radicchio is well prevented from wilting and can therefore be stored in the fridge for up to four weeks.
