This crumb cake with Golden Delicious apples is a delicious, high and soft cake with a juicy layer of apple cubes and a hazelnut topping. It is easy to prepare, genuine and eye-catching and ideal for breakfast or as a snack.

for the base
370 g flour 00
300 g Greek yoghurt
220 g sugar
180 g soft butter
5 eggs (room temperature)
Zest of 1 lemon
½ vanilla pod
2 tsp. baking powder
for the filling
2 Golden Delicious apples
for the crumble
80 g chopped hazelnuts
75 g flour 00
60 g cold butter from the fridge
45 g Demerara cane sugar
Cinnamon powder

Preparation
Start preparing the crumble. Knead all ingredients at low speed with the mixer or the stand mixer (K hook) to get a crumbly mixture. Put the crumble in a bowl and let rest in the fridge.
For the base: Cream sugar with butter in a stand mixer or with an electric whisk in a bowl. Add eggs one by one and Greek yoghurt and keep whisking to mix.
Add sieved flour and baking powder and mix with a spatula. Then add grated lemon zest and vanilla. Grease a springform pan (24 cm diameter) with butter and pour the mixture into the springform pan. Wash and dry apples, cut into wedges, remove the core, peel and cut into small cubes.
Evenly distribute the apple cubes on the surface of the dough in the pan and gently press with a spoon. Sprinkle with the crumble. Bake the cake in the preheated oven at 160°C for about 1 hour and 15 minutes (toothpick test). Remove from the oven and allow to cool completely. Remove the apple crumb cake from the form and put it on a serving plate.
