Gazpacho with carrots, Red Delicious apples, coconut milk and curcuma
Gazpacho is a Spanish cold soup made of raw vegetables that’s very popular in summer. The main ingredients are raw vegetables, different herbs and stale bread, which makes it creamy. Try our version with carrots and Red Delicious apples.

for 4 persons
300 g carrots 300 g Red Delicious apples 30 g heritage grain bread 2 tbsp. apple vinegar 1 tbsp. curcuma 300 ml ice water 50 ml olive oil extra virgin Salt Pepper
for serving Red Delicious apple slices Fresh parsley (or fresh coriander) 4 tbsp. coconut milk 40 g shelled and roasted cashew nuts
Peel carrots and cut into small pieces. Wash apples but don’t peel and cut into small cubes. Steam carrots for 8 minutes and let cool.
Soak bread slices in vinegar and put them in a bowl with carrots, apples and curcuma. Salt and pepper. Cover with cling film and let rest for a few minutes.
Then put into a mixer and mix by slowly adding oil and ice water until you get the desired consistency.
Pour into the plates and serve with apple slices, fresh parsley, 1 tablespoon of coconut milk per plate and coarsely chopped cashew nuts.
