Italian Carnival Fritters
with Apples

2 Golden Delicious
1 egg
60 g milk
125 g flour
4 g baking powder
50 g sugar
a pinch of salt
½ a lemon
Sunflower oil for deep-frying

Grate zest of half a lemon and put aside.

Cut the apples into small cubes of about 1 cm and sprinkle with the juice of half a lemon.

Put egg, milk, flour, baking powder, salt and lemon zest in a bowl and mix for 3-4 minutes to a dough with the help of a mixer.Add the apple cubes and mix well.
Heat abundant sunflower oil in a small pot. Use a teaspoon to pour the dough into the pot and deep-fry until golden yellow. Repeat until there is no more dough left.

Dry the carnival fritters on kitchen roll. They taste even better, if you turn them in sugar with cinnamon.

Carnival fritters are excellent warm but you can also serve them cold. In this case, the soft dough and the crunchy apple are a perfect combination.
