Radicchio salad with Red Delicious apples, raspberries

and honey vinaigrette

Apples give the special something to salads as they make them always new and different. This crunchy radicchio salad with Red Delicious apples rich in vitamins perfectly combines the slightly bitter taste of radicchio with the pleasant sweetness of apples.

for 2-3 persons

app. 150 g freshly picked radicchio salad from the fields
160 g cooked (or canned) chickpeas
60 g cashew nuts
100 g fresh raspberries
1 Red Delicious apple

for the vinaigrette

Olive oil
Apple vinegar
1 tsp. acacia honey
A pinch of fine salt

Start with preparing the honey vinaigrette. Emulsify two parts of oil with one part of apple vinegar and a teaspoon of honey in a bowl. Add a pinch of salt and let rest.
Wash and clean radicchio leaves. Cook chickpeas soaked in abundant water the day before. If you prefer canned chickpeas, drain and wash them well.

Cut apple into thin slices and heat a non-stick pan where you then toast the cashew nuts at high heat for 3 minutes.

Wash raspberries and delicately dry with kitchen paper.
Put radicchio, chickpeas, cashew nuts, apple slices and raspberries in a salad bowl and season with the honey vinaigrette. Serve with toasted bread slices.
