This soft Red Delicious apple coffee cake is not the usual breakfast cake: a soft dough that smells of apples and coffee and is perfectly balanced in tastes and consistencies. Try it and it will be another awakening!

for the base
300 g flour 00
160 g soft butter (room temperature)
200 g sugar
½ tsp. cinnamon powder
3 eggs (room temperature)
½ pack baking powder
60 ml milk
1 tbsp. instant coffee
2 Red Delicious apples
for the crumble
20 g flour 00
80 g cold butter in pieces
70 g cane sugar
½ tsp. cinnamon powder
A pinch of salt

60 ml milk
1 tbsp. instant coffee
2 Red Delicious apples

20 g flour 00
80 g cold butter in pieces
70 g cane sugar
½ tsp. cinnamon powder
A pinch of salt
Preparation
Start preparing the crumble. Quickly knead all ingredients to a crumbly mixture with the help of a stand mixer or by hand. Let rest in the freezer for at least 30 minutes.
For the base: Cream soft butter at room temperature with sugar in a stand mixer or with an electric whisk. Add eggs at room temperature one by one and then half of the sieved flour. Dissolve instant coffee in milk and add to the mixture. Then fold in the remaining flour, baking powder and cinnamon powder.
Add apple cubes and mix with a spatula. Pour the mixture on a rectangular tray of 24x19 cm covered with baking paper and level the surface with the help of a spatula or a spoon.
Sprinkle with cold crumbles and bake in the preheated oven at 175°C (top/bottom heat) for about an hour or a little bit more until golden yellow (toothpick test). Remove from the oven and allow to cool completely. Cut your Red Delicious apple coffee cake into slices or cubes before serving.
