Ingredients

for 4 persons

300 g red cabbage
2 Ambrosia™ apples
24 pecan nuts
5 tbsp. sugar
Dill

for the vinaigrette
1 garlic clove
2 tbsp. rice vinegar
4 tbsp. olive oil extra virgin
1 tbsp. honey
½ tsp. salt
½ tsp. grated ginger

Preparation

Peel the garlic clove and crush finely with salt in a mortar. Add vinegar, oil, honey, grated ginger and freshly ground pepper and mix.
Crack pecan nuts and toast in a pan for a few minutes. Caramelize sugar until golden in another pan. Remove the pan from the cooker, dip one nut after the other in the caramel with the help of a toothpick and let cool on baking paper. Chop them coarsely when cold.
Cut the red cabbage and the apples into thin slices and put in a salad bowl. Add caramelized nuts and dill, season with the vinaigrette and serve.
