Sponge roll filled with spiced Red Delicious apples
A soft delicacy
A soft sponge roll encloses a filling with cream and Red Delicious apples flavored with caramelized sugar and cinnamon. An inviting and spectacular dessert to enjoy slice after slice.

Ingredients
for 1 sponge roll (approx. 10 slices)
for the sponge roll
5 eggs
125 g sugar
1 tbsp. vanilla sugar
125 g flour
1 tsp. baking powder
2 pinches salt
for the filling
3 Red Delicious apples
30 g butter
4 tbsp. sugar
1 tsp. cinnamon powder
1 tbsp. lemon juice
275 g fresh liquid cream
to decorate
1 tbsp. powdered sugar
½ tsp. cinnamon
100 g fresh liquid cream
for the sponge roll
5 eggs
125 g sugar
1 tbsp. vanilla sugar
125 g flour
1 tsp. baking powder
2 pinches salt
for the filling
3 Red Delicious apples
30 g butter
4 tbsp. sugar
1 tsp. cinnamon powder
1 tbsp. lemon juice
275 g fresh liquid cream
to decorate
1 tbsp. powdered sugar
½ tsp. cinnamon
100 g fresh liquid cream
Preparation
For the sponge roll with spiced apples preheat the oven to 220°C (static) and line a baking sheet with baking paper. Beat the eggs with sugar and vanilla sugar until fluffy. Then sift the flour, baking powder and salt over the egg mixture and gently fold in with a spatula with movements from bottom to top. Pour the batter on the baking sheet lined with baking paper, spread evenly and bake at 220°C for approx. 6 minutes (make the toothpick test).
In the meantime, prepare a clean tea towel and sprinkle it with a little sugar. Remove your sponge from the oven and place it upside down on the tea towel. Gently peel off the baking paper and roll the sponge up lengthwise inside the tea towel. Let cool completely.
For the filling
Wash and peel the Red Delicious apples, remove the core and cut them into cubes. Melt the butter in a pan. Add the apple cubes and sauté for a couple of minutes over high heat, stirring occasionally. Add two tablespoons of sugar and caramelize while stirring. Finally, add the cinnamon and lemon juice, stir and remove from heat. Let cool completely. Whip the cream with the remaining two tablespoons of sugar and place in the fridge.
Wash and peel the Red Delicious apples, remove the core and cut them into cubes. Melt the butter in a pan. Add the apple cubes and sauté for a couple of minutes over high heat, stirring occasionally. Add two tablespoons of sugar and caramelize while stirring. Finally, add the cinnamon and lemon juice, stir and remove from heat. Let cool completely. Whip the cream with the remaining two tablespoons of sugar and place in the fridge.
Completion
When both the sponge roll and the Red Delicious apple filling have cooled, you can fill the roll. Unroll the sponge roll and spread the cream over its entire surface, leaving approx. 2 cm along the outer edge of your roll. Distribute the spiced apples on the opposite side from which you will start to roll it up, keeping aside about 2 tablespoons for decorating. Roll up the sponge roll starting from the side with the apple filling. Mix the powdered sugar with cinnamon and sprinkle on the roll. Then place your sponge roll on a serving tray. Whip the cream, transfer it to a decorating bag and decorate the surface of the roll as desired. Finish by placing piles of spiced apples on top of the cream. Keep your sponge roll with spiced apple filling in the fridge for an hour before serving.
